4 chicken thighs or 2 breasts
1 T. oil
1 small onion
1/4 tsp thyme
1/2 tsp pepper
1/2 tsp rubbed sage
1/2 c. celery cut up
green pepper, cut up
1/4 c. barley, rinsed
8 c. cold water
2 chicken bouillon cubes
2 bay leaves

Directions:
Directions:
Brown onion in oil. Add all ingredients to Dutch oven-cover and cook for one hour. Remove chicken, cool and cut up. Add to soup. If making dumplings, add chicken after dumplings are done.
DUMPLINGS:
2 eggs, beaten. Add a little thyme, rubbed sage, instant chicken bouillon. Add flour until stiff. Drop by 1/2 tsp into boiling soup. Cook til done-15 minutes or so. Add parsley flakes if desired. Put in cut up chicken.
