5 4-6 ounce potatoes and/or sweet potatoes
1 Tbsp. olive oil
1 clove garlic, minced
1- 4 ½ ounce round Brie cheese, cut into ½ inch pieces
1 cup grape tomatoes, quartered
¼ cup walnuts, toasted and chopped
¼ cup snipped fresh Italian parsley
1/8 to ¼ tsp. crushed red pepper

Scrub potatoes, cut each potato in half lengthwise. In a small bowl combine the oil, garlic and ¼ tsp. salt. Brush cut surfaces of the potatoes with the oil mixture.
For charcoal grill, place potatoes, cut sides down on the grill rack directly over medium coals. Grill, uncovered for 20 – 25 minutes or until tender, turning once halfway through grilling. (For a gas grill preheat grill. Reduce to medium heat. Place potatoes on grill cut side down, cover and grill as above
Carefully scoop out the inside of each potato half, leaving a ½ inch thick shell (reserve scooped out potato for other uses) In medium bowl , combine Brie pieces, grape tomatoes, walnuts, parsley, and crushed red pepper. Spoon mixture into potato shells. Return potatoes to the grill filled side up to grill for 5 -7 min or until cheese is melted and filling is heated thoroughly through.
