6 cups peeled and sliced fresh peaches
1/2 cup brown sugar1/2 cup granulated sugar
pinch of salt
3 tbsp tapioca
1/8 tsp almond essence
2 crusts for 9"unbaked pie shell
1 tbsp butter
water

Directions:
Directions:
Place peaches in a large bowl. In another bowl combine sugars, salt & tapioca, mixing well. Add to peaches, stirring gently to mix. Sprinkle almond essence over fruit. Spoon fruit into pie shell. Dot with butter. Place top crust over fruit and flute edges to seal. Brush crust with water. Sprinkle lightly with sugar. Bake at 450 degrees for 10 mins. Reduce heat to 375 degrees and continue baking for 40 mins or until golden brown
