1 c real butter (2 sticks)
1 lb light brown sugar (2&1/2 c)
1 (14 oz) can sweetened condensed milk
1 c light corn syrup
1 pinch salt
1&1/2 tsp. vanilla extract
Sea salt for a light sprinkle if desired

In a heavy bottomed saucepan over medium heat, combine the butter, brown sugar, milk, corn syrup and salt. Stir and heat until between 234 and 250º or until a small amount goes to soft ball stage with a cold water test. Cook for 2 minutes at that temperature and stir in vanilla. Immediately remove from heat.
Butter a 9x13 baking pan. When caramel is ready, pour into pan. Sprinkle lightly with sea salt if desired. Allow to cool completely to room temperature. Remove from pan and cut into squares with scissors. Wrap pieces in waxed paper or cellophane.

I use a candy thermometer and I go to 248º and I cook for around 3 minutes. I also always use real butter instead of margarine. Margarine just has too much water content and it won't come out as creamy as a caramel should, in my opinion.
