1 1/4 cups sugar
1/4 cup flour
3 tablespoons cornstarch
1/4 teaspoon salt
3 cups boiling water
3 egg yolks
1 tablespoon butter or margarine
1 tablespoon lemon rind, grated
2/3 cup lemon juice
Meringue:
3 egg whites
1/4 teaspoon cream of tartar
6 tablespoons sugar
Pastry:
1 cup flour
1/2 teaspoon salt
1/2 cup shortening
1/4 cup cold water

Directions:
For the pastry, cut shortening into flour and salt until mixture resembles pea-size chunks. Add water a little at a time until right consistency. Cover and refrigerate for one hour. Roll out to fit 9-inch pie pan. Bake at 375 for about 15 minutes. Prick crust several times with a fork before baking. In a saucepan combine, sugar, flour, cornstarch, and salt. Gradually stir in boiling water. Cook over medium heat, stirring constantly, until thickened. Cover and cook for 2 minutes stirring occasionally. Stir a small amount of hot mixture into the egg yolks. Then blend into remaining hot mixture. Cook 1 minute longer, stirring constantly. Remove from heat and blend in margarine, lemon rind and lemon juice. Cool to lukewarm and turn into a baked 9-inch pie shell. Top with meringue. To make the meringue, beat 3 egg whites, until fluffy. Slowly beat in sugar. Spread over cooled lemon filling and bake for 12 minutes at 375º. Watch closely so meringue doesn't burn.
