9 inch unbaked pie shell
3 cups chopped rhubarb
boiling water
1 1/2 cups sugar
2 tablespoons flour
dash salt
1/4 teaspoon cinnamon
1 tablespoon melted butter
3 egg yolks, beaten
Meringue:
3 egg whites
1/2 teaspoon cream of tartar
6 Tablespoon sugar

Directions:
Directions:
Put rhubarb in bowl. Pour boiling water to cover, let stand 5 minutes, drain. Add sugar, flour, salt cinnamon and butter. Add beaten egg yolks, mix. Pour into unbaked pie shell.
Bake at 400º for 10 minutes. Turn heat down and bake at 350º for 30-35 minutes. Remove from heat. When cool, cover with meringue. Bake at 350º until golden brown.
