Directions:
Cut into 1 inch pieces2 medium sized chicken breasts. Marinate in a bit of salt and 1 tsp. soy sauce for at least 15 minutes. Dip pieces in batter and deep fry for 3-5 minutes.
Batter: Use Aunt Jemima Buttermilk Pancake mix . 1 cup water and 1 cup pancake mix. May add 1 Tbsp. cornstarch for crispier batter.
Serve with Sweet and Sour Sauce or Pineapple Sauce.

Pineapple Sauce: 1 can pineapple chunks, 1/4 cup lemon juice, 1/2 cup water, 1/2 cup brown sugar, and 1 Tbsp. cornstarch. Simmer until thickened.
