2 lbs. lean ground beef
*3/4 cup rice (not instant)
*1 med. onion, grated or finely chopped
*2 eggs
*1/2 carrot, grated (optional)
*1/2 green pepper, finely chopped (optional)
*2 tsp. pepper
*1 T. garlic powder
*1 tsp. garlic salt
*1 tsp. salt
*2 T. ketchup

1 cup brown sugar
2 (8 oz) cans tomato sauce
2 extra large cans of whole tomatoes
2 medium onions
2 heads cabbage

Combine all starred (*) ingredients to the meat. Mix thoroughly.
Line the bottom of a roasting pan with uncooked cabbage leaves. Remove additional cabbage leaves and boil 4 or 5 at a time until pliable. Drain on towel and put more in pot to boil. Take cooled cabbage and cut out thick part at bottom in a "V". Place meat mixture (according to size of leaf) on bottom of leaf. Fold over one side and then the other, then roll up from the bottom. Place seam side down in roasting pan on bed of cabbage leaves. Continue until all cabbage is used up. After one layer of rolls, slice an onion over it and continue next layer. Pour on 2 cans tomato sauce. Cover top with small, cooked cabbage leaves left over and pour on 2 cans of whole tomatoes, undrained. Sprinkle 1 cup brown sugar on top. Bring to a boil on stove and then bake, covered, at 375º for 2 1/2 to 3 hours. (Test after 2 hours--pierce with a fork on thick part of cabbage).

Use a large roasting pan or a deep dish because this will overflow during baking. If you have leftover meat mixture, make into meatballs and place among cabbage rolls. You can also add pieces of Italian sausage (pan fried first) in with the cabbage rolls for a nice flavor and extra meat servings.
