1 tbsp olive oil
1 onion, chopped
4 green onions, chopped
2 or 3 jalapeņo peppers
1/2 medium sweet red pepper, chopped
2 medium tomatoes, peeled, seeded, and chopped
2 cloves garlic, squished
1/4 cup whipping cream
4 cups shredded Cheddar or Monterey Jack cheese
2 tbsp all-purpose flour
1 tsp cumin
salt and pepper to taste

Directions:
Directions:
Heat the olive oil in a large skillet over medium heat. Add chopped onion, green onions, chopped jalapeņo peppers and red peppers, and cook, stirring until the onions are soft- 6 to 8 minutes.

Stir in tomatoes and garlic and let simmer for 5 minutes, until tomatoes begin to soften. Stir in the cream.

Meanwhile, toss the cheese with the flour and cumin, then add to the tomato mixture in the skillet. Season to taste. Cook just long enough to melt the cheese.

Serve warm with tortilla chips for dipping.
