Orzo pasta (about 2 cups dry)
Dried cranberries
1 lemon squeezed
Ricotta salata (at Longos)
Toasted pine nuts
Baby arugula

Directions:
Directions:
Cook the orzo pasta. Once you drain the pasta, be very generous with the olive oil because the pasta will stick. Let it cool for about 20-30 minutes before you add the other ingredients. Once you are ready to serve put the baby arugula in. All of the ingredients are to eye, so you can put as little or as much as you want!
