1 can of kidney beans
1 can of black beans
1 can of white northern beans
1 large can of peeled chopped tomatoes
1 small can of tomato puree
1/2 cup of dried lentils
1 packet of frozen sweet corn
1 onion (chopped)
1 red pepper chopped
1 green pepper chopped
1 bottle of beer (whatever you have in the fridge)
1 packet of chili mix (your preference)

Directions:

In a large crock pot add all the canned ingredients and the lentils. Add the onions, bell peppers and sweet corn and stir together. Add the beer and chili mix. Top up with water to just under the level of the ingredients in your crock pot. (This depends on your crock pot and how hot is gets).
Put crock pot on low heat and leave to simmer all day.

This is one of those meals that you can very quickly prepare in the morning before work and come home to it that night. It takes literally about 10 minutes to throw everything into the crock pot.
You can really cheat by buying ready chopped onions from Trader Joe's or even a frozen bag of chopped bell peppers.
You can serve this with grated cheese (what kid doesn't like cheese?) and corn muffins if you are feeling up to it.
