2 c. white sugar
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 pinch of salt
1/2 c. butter
6 sweet potatoes, peeled and sliced
1 tbsp. vanilla extract

Directions:
Directions:
In a small bowl, mix the sugar, cinnamon, nutmeg, and salt together. Melt butter in a large skillet over medium heat; add sweet potatoes and stir to coat.
Sprinkle sugar mixture over the sweet potatoes, and stir. Cover skillet and reduce heat to low. Cook, stirring occasionally,for one hour, or until the sauce is dark and the potatoes candied. They should be tender but a little hard around the edges.
Stir in vanilla and serve.

This method is great for family size cooking, but for
a larger group and limited time, I have steamed the
sliced and quartered sweet potatoes first until partially cooked and then stirred the sugar mixture into them. Once coated, the sweet potatoes can be
put into a covered baking dish and baked at 350 degrees until fully cooked and candied.
Then stir in the vanilla.
