2 onions
2 celery stalks
2 carrots
8 beets scrubbed not peeled
1/4 head of Savoy cabbage or any cabbage
small bunch parsley
small bunch dill
1 tsp salt
1 bay leaf
6 peppercorns
1 tbsp lemon juice or vinegar

Directions:
Directions:
Put all veggies and spice in a pot with 2 quarts water and simmer for 1 hour. Remove from heat and strain broth, keep lemon juice till later.
Peel the beets and slice thinly and put back in broth, discarding veggies and spicees. Simmer briefly and add lemon juice or vinegar
