4 eggs
1/2 c. butter, softened
1/2 c. vegetable oil
1 1/2 c. brown sugar
1 1/2 c. sugar
1 tbsp vanilla
4 tsp cinnamon
1 tsp allspice or 1/4 tsp cloves
1 1/2 tsp baking soda
1 tsp baking powder
1 1/2 tsp salt
3 1/2 c. flour
3 c. zucchini, grated

Optional: 1 c. raisins, 1 c.chopped walnuts, 1/2 c. shredded coconut

Directions:
Directions:
Preheat oven to 375º. Grease 3 loaf pans. Mix butter, oil and sugars together. Add eggs, vanilla and zucchini. Mix dry ingredients together and add to wet. Mix well . Add optional add ins as desired. Bake for 45-60 minutes.
Makes 3 loaves.

If mixed by hand it will be bread consistency. If mixed with beaters it will have cake consistency.
