2 fresh artichokes
1 cup Italian seasoned bread crumbs
1/4 cup Romano cheese
1/2 tsp. pepper
1/2 tsp. garlic powder
1 pinch cayenne
1/4 tsp. onion powder
1 1/2 - 2 pounds shrimp
1 cup seafood seasoning
2 - 3 tbsp. salt
1 lemon cut in half and squeezed
2 tbsp. garlic powder
1 tsp. onion powder
6 - 8 cloves garlic
1/2 cup olive oil
1/2 cup butter
1 tsp. parsley
1/4 tsp. Tony's Chachere's seasoning

Rinse the artichoke; remove the "choke, the prickly, fuzzy center of the artichoke; rinse the artichoke again; cut the stem off of the artichoke so the artichokes rests flat on a surface; cut away the upper third of each artichoke and trim the prickly leaf tips with scissors; wash the artichoke thoroughly; squeeze lemon juice over the leaf tips to prevent them from turning brown; place the artichokes in a large pot; fill water to 1/4" of the artichoke; place the lemon wedges in the water; simmer the artichokes and lemon wedges for 25 minutes. Drain artichokes upside down in a colander.

Fill a large pan half full of water; add 1 cup seafood seasoning; 2 - 3 tbsp. of salt; 1 squeezed lemon; 2 tbsp. garlic powder; bring to a boil; add the shrimp and boil for three minutes; soak 30 minutes; drain shrimp in a colander and cool; chop shrimp in a food processor.

Blend bread crumbs, roman cheese, pepper, garlic powder, cayenne, onion powder, and chopped shrimp in a bowl and set aside.

Fill each artichoke leaf with the bread crumb/shrimp mixture.

Saute olive oil, butter, and parsley and drizzle over the stuffed artichokes. Squeeze a little lemon juice over the artichokes.

Pre-heat oven o 400 degrees.

Bake artichokes 10 - 15 minutes until golden brown.
