1 cup chopped onion
2 teaspoons minced garlic
3/4 cup beer
2 1/2 cups Italian bread cubes
1 cup milk
1 cup shredded sharp Cheddar cheese
1/3 cup diced kosher dill pickles
1/4 cup ketchup
2 tablespoons minced fresh parsley
1/2 teaspoon dry mustard
2 eggs
1 tablespoon Worcestershire
2 pounds ground beef
2 teaspoons kosher salt
1 teaspoon pepper
9 slices bacon

Preheat oven to 375 F. In large skillet, heat oil over medium-high heat. Cook onion until soft (4-5 minutes); stir in garlic and cook 1-2 minutes. Add beer; cook until almost evaporated (4-5 minutes). Transfer to large bowl; cool to room temperature.
In shallow dish, combine bread and milk, turning once; let stand until soggy, but not falling apart (5-10 minutes). Lightly squeeze bread to remove some of the milk; discard milk. Mash bread with fork; add to onion. Stir in cheese, pickles, ketchup, parsley and mustard. Beat together eggs and Worcestershire; stir into bread mixture.
Add beef to bread mixture; sprinkle salt and pepper over beef. Using hands, gently mix all ingredients until just combined.
Line 9x13-inch baking dish with parchment paper. Transfer beef mixture to baking dish and form into loaf. Arrange bacon slices over loaf, tucking ends under loaf. Bake until instant read thermometer inserted in the center of meatloaf registers 160 F (40-50 minutes). Preheat broiler to high; broil until bacon is brown and crisp (3-4 minutes). Let stand 10 minutes before slicing.
