2 egg yolks
2 egg whites
2 tsp. lemon zest
1/3 c. lemon juice
1/2 c. sugar
dash of salt
3/4 c. nonfat dry powdered milk
2/3 c. cold water
4 coconut or vanilla bar cookies, crushed

Directions:
Directions:
Stir together egg yolks, lemon zest, and juice. Add sugar and salt; mix well. Combine egg whites, nonfat dry powdered milk and water in large mixing bowl and beat until stiff peaks form. Add egg yolk mixture and beat just until blended. Pour into 8x8 inch pan. Top with cookie crumbs. Freeze until firm.
