3/4 to 1 cup mayonnaise
2 cups cooked chicken – cubed
1/2 cup celery, chopped
3/4 cup sweetened dried cranberries
1/2 cup sliced almonds (with skin on, not the blanched kind)
1/2 cup thin sliced seedless grapes
1/4 cup diced onions

Directions:
Directions:
Combine all ingredients in large bowl; cover and chill. Best if you let it sit in the refrigerator to mix all the flavors for a couple of hours. If making a day ahead, add crunchy ingredients right before serving (celery and almonds). Makes about 5 cups; serve in lettuce cups or make sandwiches with lettuce and croissants.
