12 Vine ripened tomatoes
2 large cloves garlic, minced
1 large handful basil leaves, chopped into "confetti"
1/4 c. extra virgin olive oil, plus more for bread
2-3 T. red wine and/or balsamic vinegar
salt and pepper to taste
1/4 c. Parmesan cheese
1 large baguette, sliced on an angle

De-seed and de-core all tomatoes and chop into small pieces. Place chopped tomatoes into bowl. Mince garlic and chop basil into "confetti" and add both to tomatoes. Add olive oil, salt, pepper, vinegar and Parmesan cheese. Toss to combine.

Slice baguette on an angle, dress with olive oil, salt and pepper and toast until golden brown.

Serve tomato topping in a bowl with crustini on the side (to prevent sogginess).
