1/2 c. butter (room temperature)
1 c. sugar
2 large eggs
2 c. flour
1/4 tsp. baking powder
3/4 tsp. baking soda
1/4 c. buttermilk
1 c. ripe bananas (about 3, mashed)
1/2 c. walnuts, chopped

Directions:
Directions:
Preheat oven to 350 degrees. Cream together butter and sugar in a large bowl. In a small separate bowl, sift together flour, baking powder, and baking soda. Add in dry ingredients and add each egg in one at a time. Stir in buttermilk, bananas and walnuts. Be careful not to over mix batter. Bake in a greased bread pan for approximately 45 minutes at 350 degrees.

If you do not have buttermilk you can combine 1/4 c. low-fat milk with about 1 tsp. white vinegar. Let stand 5 minutes before using. You can also omit the walnuts if you plan to feed this to small children.
