1 lb boneless skinless chicken thighs, or breasts
1 cup cola – Coca Cola® is preferred
1 cup ketchup – Heinz® is preferred
1 large onion, sliced into thin strips
1 large red bell pepper, sliced into thin strips
1 cup baby carrots – optional
A few shakes of your favorite seasoning blend – Mrs. Dash's® Garlic seasoning works well, as do other garlic/pepper seasoning and most BBQ rubs. Just sprinkle 1-2 tsp per pound on the chicken and rub it in a bit

Place the chicken in your crockpot, sprinkle on the seasoning and rub it in briefly. Add the onions, red bell pepper, and carrots (if using) on top of the chicken.

Measure the ketchup into a medium sized bowl or 4 cup mixing cup. Add the cola slowly and stir to combine – it will foam up a bit. Pour this over the chicken.

Cook on high for 4-6 hours, or on low for 8-12. Or bake at 350 in a covered pan for about an hour.

Taste, add salt or other seasonings if necessary.

Serve over steamed rice or with buttered pasta or potatoes.

Its really easy to increase the yield on this, just double the quantity of chicken and add a bit more vegetables to it. You probably won’t need to double the sauce – start with 1 and 1/2 cups of cola and ketchup first and add more if it looks dry.

Variations – Try substituting lemon pepper seasoning with ginger ale, or perhaps give it an Asian twist by adding a bit of soy sauce, an Asian spice blend, and then using ginger ale or orange soda. You also can substitute BBQ sauce for some of the ketchup.
