4 Tbsp butter
2 pieces cod fillets
Salt and pepper, to taste
Splash lemon juice
1/2 package Ritz® crackers, rolled to fine crumbs

Tartar Sauce:

1 large dill pickle, chopped
3 green onions, minced
1 large handful fresh chopped parsley
Juice of 1/2 lemon
1 level tsp dill weed
Mayonnaise

Directions:
Directions:
Melt butter over low heat. Season fillets with salt and pepper, and sprinkle lightly with lemon juice.

Dip in melted butter and then in Ritz® cracker crumbs. Place on a baking tray with a little water for moisture.

Bake at 450 for 10 minutes per inch of thickness of fish.

Tartar sauce: Combine the pickle, onion, parsley, lemon juice, and dill weed, with enough mayonnaise to hold together. Chill until ready to serve.
