4 cups flour
1/2 lb. lard
1 tsp. salt
1/2 cup to 2/3 cup cold water
4 tbsp. butter
Filling:
1 1/2 lbs. beef
1/2 lb. pork
4 cups sliced potatoes
1 cup sliced carrots
2 cups diced onions
salt and pepper

For the dough: Cut lard into flour and salt, crisscrossing with 2 knives until particles are the size of coarse crumbs. Sprinkle with cold water, several tablespoons at a time, mixing with a fork until all flour is moistened and the dough almost cleans the side of the bowl. Gather the dough into 4 balls. Shape each ball into a flattened round on a lightly floured board. Roll each into a circle 9" in diameter.

For the filling: Make 4 piles of each ingredient. Layer all ingredients on the bottom half of each dough circle as follows: beef, pork, potatoes, carrots, onions , lightly salt and pepper and then dot with butter. Fold top half of dough circle over the filling, seal, make 3 holes in the top to let steam escape.

Bake at 350 degrees for one hour.
