2 TBS butter
1 1/2 - 2 TBS flour
1 cup milk or light stock, or mix of milk and stock

Melt the butter over low heat. Add the flour gradually, whisking constantly to avoid lumps. Cook 2-4 minutes or until well blended and the taste of raw flour is gone. Gradually add the one cup of liquid, whisking constantly to work out lumps. Season according to use.

Makes 3/4 cup. Use for a base for macaroni and cheese sauce, peas and potato dishes, milk based gravies, etc.
