Ingredients: Melt: 1/3 c. chocolate chips in top of double boiler over boiling water. Remove from heat. Blend in: 3 T. sugar 2 T. sour cream or sweet cream 1/2 tsp. rum flavoring Chill this in refrigerator until firm.
Cream: 3/4 c. soft butter 1/2 c. sifted powdered sugar 1/4 tsp. salt 1 tsp. vanilla Add: 2 c. flour gradually, mixing thoroughly 1/2 c. pecans, chopped

Directions:Shape dough into small balls, using a rounded teaspoonful for each. Press a deep hole in the center with thumb and fill with 1/4 tsp. with the chocolate filling. Seal, re-shaping cookie into ball. Place on ungreased cookie sheets and bake at 375º for 12-15 min, or until light brown and just beginning to crack and show the filling. Cool and roll in granulated or powdered sugar. ( Be sure the filling is completely enclosed and the dough is fairly smooth, after shaping.) |
