2 c. graham cracker crumbs
1/2 c. butter, melted
1 envelope unflavored gelatin
1/2 c. water
3 (8 oz.) pkg. cream cheese
1 1/4 c. sugar
5 oz. evaporated milk
1 tsp. lemon juice
1 tsp. vanilla
1/3 c. Amaretto
3/4 cup heavy cream, whipped

USE 9-INCH CHEESECAKE PAN (SPRING FORM PAN WHERE BOTTOM LIFTS OUT).
2 cups of graham crackers crushed fine.
Mix with 1/2 cup or more of melted butter.
Press into the pan and chill.

1 envelope of unflavored gelatin with 1/2 cup of water.
Dissolve on low heat about 3 minutes. Set aside.

Mix together:
3 (8 oz) packages of cream cheese, 1 1/4 cups sugar.
Add 5 oz. evaporated milk and 1 tsp. lemon juice.

Beat for 2 minutes; gradually add gelatin mixture, 1 tsp. vanilla & 1/3 cup of Amaretto

Fold in 3/4 cup of heavy cream (whipped)

Pour into prepared pie crust, Chill overnight.

This is especially pretty after removing from pan to drizzle melted chocolate squares over it and decorate with maraschino cherries. Very good!!!
