3/4 tsp dry yeast
3 Tbsp warm water (about 110 degrees)
1 1/2 tsp sugar
3/4 cup buttermilk
6 Tbsp shortening, melted and cooled
1 3/4 cup all purpose flour
1 Tbsp sugar
1 1/4 tsp baking powder
1/4 tsp baking soda

Directions:
In a small bowl stir together the yeast, warm water and 1 1/2 tsp sugar and let stand for 5 minutes until yeast foams.

Add the buttermilk and shortening.

Sift the flour, remaining Tbsp sugar, baking powder, baking soda and salt into a mixing bowl.

Add the yeast-buttermilk mixture and stir by hand until just moistened. Batter will look coarse.

Transfer dough to lightly floured surface and knead a few times.

Roll or press the dough to a thickness of 1/2 inch.
Using a 2 inch cookie cutter, cut the biscuits and transfer to a baking sheet sprayed with cooking spray or lined with parchment paper.

Allow biscuits to rise in a warm draft free place for about 20 minutes until nearly doubled.

Bake biscuits at 400º for 12-14 minutes until golden on top.

Cut biscuits can be stored, covered, in the refrigerator for a day or two. Remove from refrigerator and allow to come to room temp and nearly double in size before baking.
