1 package (3 oz) cream cheese (cubed into small pieces)
1/2 cup crushed pineapple (drained)
3 - 4 slices bacon (crumbled)
4 - 6 eggs
1/4 cup water
1/2 tsp salt
Dash pepper

Directions:
Directions:
Cook bacon in 10" omelet pan until crisp. Drain pan, reserving 1 Tbsp of drippings. Crumble bacon.

Mix eggs, water, salt, and pepper well with whisk.

Heat reserved drippings in pan until just hot enough to sizzle a drop of water. Pour egg mixture into pan. Carefully draw cooked edges to center of pan, letting uncooked portion run under the edges. Shake pan rapidly in a circular motion to keep mixture moving as it cooks.

While top is still moist and creamy looking, place cream cheese cubes on 1/2 of omelet. Add pineapple and bacon bits on top of cream cheese. Fold omelet in half, then roll out of pan onto a platter.
