1 cup butter
3 egg yolks
1 Tbsp almond extract
2/3 cup sugar
2 cups flour

Directions:
Directions:
Cream butter (softened but not melted) and sugar well. Add egg yolks one at a time. Fold in flour and almond extract.

Press dough through a cookie press onto an ungreased cookie sheet, spacing cookies about 2" apart. Sprinkle with sugar or decorate as desired.

Bake at 400 degrees--1 sheet at a time--at the top of the oven. Remove from oven when surface of cookies start to look slightly dry -- before the edges start to brown. (First batch takes about 7-8 min, other batches about 5-6 min) Transfer cookies to rack to cool.

Makes approximately 5 dozen cookies.
