8 green onions – cut in 1-inch julienne pieces.
8 ozs. Chinese cabbage ( ½ a head)
3 ribs celery, cut in 1-inch julienne pieces
2 c fresh bean sprouts
¾ tsp. sugar
¾ tsp. salt
1 lb lean pork or lean chicken
2 tbsp. Dry sherry
2 tbsp. Soy sauce
2 tsp. grated pared fresh ginger root
¼ c water
1 ½ tbsp cornstarch
24 egg roll wrappers
3 vegetable oil

Directions:
Directions:
Finely chop onions, cabbage & celery.
Put all chopped ingredients in a large mixing bowl.
Add ground pork or chicken. Add sherry, soy sauce, ginger, sugar and salt. Mix well.
Mix water and cornstarch in small bowl til blended.
Place ¼ cup of pork or chicken mixture evenly across a corner of each wrapper. Brush cornstarch mixture evenly over all edges of wrapper. Carefully roll wrappers around filling folding in the corners.
Fry egg rolls til golden brown 3 to 5 minutes, drain
on paper towels.
