rind of 1- 20lb. watermelon
1 gal. cold water
2 T. salt
2c. Vinegar
7c. sugar
1 T. cloves
2 to 3 sticks of cinnamon.

Directions:
Choose thick, firm rind. Trim off green skin and pink flesh, leaving a very thin line of pink, cut in small squares.
Soak overnight in brine made of cold water and salt. In the morning, rinse in cold water and let stand in ice water for 1 hour. Drain, cover with boiling water and simmer til tender. Prepare
syrup of vinegar, sugar and spices, tied loosely in a cheese cloth bag. add drained rind, to boiling syrup. Cook gently until rind is clear and transparent. Remove spice bag.
Pack rind in hot sterilized jars and pour syrup over the rind. Seal at once. Process in water bath for 5 minutes. Let stand overnight.
