1c.( 2 sticks) unsalted butter, cut up
1 1/2 c, granulated sugar
1T. Light corn syrup
1 c. Chopped almonds plus 1/4c. finely chopped almonds
12 oz. mild chocolate bars, chopped

Line a 15x10x1 inch jelly roll pan with nonstick foil or regular foil coated with nonstick spray. In a medium-sized saucepan, heat butter, sugar, corn syrup and 2 T. water. Heat over medium heat to melt butter. Increase heat to medium-high and insert candy thermometer. Cook mixture about 12 minutes until golden brown and temperature reaches 300 degrees
Do not stir. Remove from heat and remove thermometer Carefully stir in 1c. chopped almonds.
Quickly pour toffee onto prepared pan and spread to edges. Cool on wire rack for 30 minutes.
Melt half of the chocolate in microwave on High for 45 seconds; stir til smooth. Spread over the top of cooled toffee and refrigerate 20 min. Once the bar is firm, flip over on a piece of waxed paper. Melt remaining chocolate and spread on that side, sprinkle with finely chopped almonds. Once firm, break in 2 1/2 in. pieces Store in a airtight container up to 1 month.
