10 oz graham crackers or tea biscuits
1 (3.5 oz) stick of butter
3/4 cups sugar
8 oz creme fraiche
8 oz ricotta cheese
8 oz Greek yogurt
3 eggs
small jar of your favorite fruit jam/jelly

Directions:
Directions:
Preheat oven to 350 degrees. Line a tart dish with baking paper. Crumble the Graham crackers (or tea biscuits) and work the butter in until its a crumbly mixture. Press this mix into your oven proof dish. Separate eggs and reserve the whites. Add sugar to the yolks and beat well. Add ricotta, creme fraiche and yogurt. Whip egg whites to stiff peaks and fold into cheese mix. Spread this mix on top of Graham base and smooth. Bake for 30-40 minutes. Shut oven off and let set in oven for another 20-30 minutes (you can take it out to cool if you prefer it softer). Put your favorite jam/jelly into a saucepan and heat until its a liquid. Smooth over the top of your cooled cheesecake with a spatula. Let cool and enjoy!
