4 medium-size cooking apples, peeled and sliced
1/2 c. sugar
1/4 tsp. ground allspice
Pastry (recipe follows)

Directions:
Place apples in a saucepan with a small amount of water. Cook over medium heat, stirring occasionally, about 20 minutes or until tender. Drain well. Mash slightly, and measure 2 1/2 c. apples, reserving remaining apples for other uses. Combine apples, sugar, and allspice; stirring well. Set aside. Divide pastry into 7 portions; roll each portion into a 7-inch circle. Spoon 1/3 c. apple mixture on half of each circle. Fold circles in half; press edges together with a fork dipped in flour. (Fry pies immediately after filling.) Heat 1/2 inch oil in a large skillet over medium-high heat. Cook pies, two at a time, until golden turning once; drain on paper towels. Yield: 7 (7 inch) pies.
Pastry: 1/3 c. shortening, 2 c. self-rising flour, and 2/3 c. cold water:
Cut shortening into flour until mixture resembles coarse meal. Sprinkle water (1 T at a time) evenly over surface; stir with a fork until all ingredients are moistened. Shape into a ball. Yield: enough pastry for 7 pies.

Mother was known among her family and friends as an outstanding pie bake. The same filling is used as that of the fried apple pies. No family member has been able to duplicate her pie crust.
