3 eggs, well beaten
1 1/2 cups sugar
2 tsp. vanilla
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 cups grated, raw, unpeeled zucchini
1/2 to 1 cup nuts

Directions:
Directions:
Preheat oven to 350º
Combine eggs, sugar and vanilla in a bowl.
Blend in flour, baking powder, baking soda, and salt.
Add zucchini and nuts.
Pour into greased loaf pan.
There were no instructions about how long to bake this, but other recipes say anywhere from 40 to 60 minutes. SORRY!

I got this recipe from a friend's mom in the 70's. I had never had zucchini bread before. If you make a lot of it, you can freeze the bread.
