2 10 oz. packages romaine salad greens
2 Granny Smith apples, cored and thinly sliced
2/3 c. dried cranberries
2/3 c. roasted cashews
2 medium shallots, thinly sliced
2 cloves garlic, minced
1/4 c. olive oil
2 tsp. honey
1 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. pepper
1/4 c. balsamic vinegar

Directions:
Directions:
In a large bowl, toss the greens, apples, cranberries, and cashews.
In a large skillet, cook shallots and garlic in olive oil for about 3 minutes (until tender). Remove from heat. Whisk in honey, mustard, and s/p until combined. Stir in vinegar. Add dressing to salad and toss to coat.
