4 small zucchini, halved lengthwise, then sliced
2 tbsp. lemon juice
1 tbsp. olive oil
3 cups thinly-sliced onions
3 large tomato, coarsely chopped
1 tbsp. white wine vinegar
1 garlic clove, minced
1 tsp. basil, fresh or dry
1/2 tsp. freshly-ground sea salt
1/4 tsp. red pepper flakes
6 cups hot cooked whole grain penne pasta

Directions:

In a small bowl, combine zucchini and lemon juice; toss well. In a large skillet with cover, heat oil over medium heat. Stir in zucchini and onion, saute 3-4 minutes. Add tomatoes plus next 5 ingredients; bring to a boil. Reduce heat. Cover and simmer 5-7 minutes. Toss with hot pasta.
