1 ½ cup brown sugar
2/3 cup oil
2 eggs
1 cup buttermilk
1 tsp. baking soda
1 tsp. salt
2 ½ cup flour
½ cup chopped walnuts
1 ½ cup chopped rhubarb

Directions:
Directions:
Combine sugar, oil and eggs. Beat well. Stir baking soda into buttermilk and then add to sugar mixture. Gradually add salt and flour to sugar mixture. Stir in rhubarb and nuts. Pour batter into 2 well-greased 9x4-inch baking pan. Sprinkle tops with mixture of ½ cup sugar + ½ tsp. cinnamon + 1 tbsp. firm butter. Bake @ 350° for 55 minutes.
