½ cup chopped onion
1/3 cup shredded carrot
¼ cup water
1 can cream-style corn
1 can whole kernel corn, drained
1 cup milk
1 cup coarsely crushed saltine crackers
¾ cup cheddar cheese
2 slightly beaten eggs
¼ cup cheddar cheese

Grease 2-CT. square baking dish; set aside. In a saucepan combine onion, carrot and water. Bring to a boil; reduce heat. Simmer, covered for 5-7 min. or until vegetables are crisp tender. Drain well, pressing out excess liquid. Meanwhile, in a large mixing bowel stir together cream-style corn, whole kernel corn, milk, crushed crackers and ¾ cup shredded cheese and eggs. Stir in cooked vegetables. Transfer to the prepared baking dish. Bake, uncovered in a 325 oven for 40-45 min. or until center is set. Sprinkle w/ ¼ cup shredded cheese. Let stand 10 minutes before serving.
