4 Large Garlic Cloves
3 T. Minced Jarred Garlic
6-8 Mushrooms sliced
Olive oil
Small red and green pepper cubed
Med onion cut into big pieces
1 c. Good red wine (pref. Cab)
1/4 c. Parmesan cheese
Oregano
2-3 Bay leaves
1 tsp. white sugar
2-3 lbs Good Sausage (hot and sweet)
4 C. Crushed Tomatoes
1/2 Can water
Salt and Pepper

Directions:
Directions:
Get a big pot and add about 3 T. olive oil and heat on med. Add chopped fresh garlic cloves, sausage cut into 1-2 inche pieces, onion, and broken bay leaves. Sprinkle sausage mixture with about 3 T. oregano, salt and pepper, and add 1 T. minced garlic. Cook on med-high heat for about 10-15 min till sausage is good and browned. Let sit for a while before stirring. You may have to add a little extra olive oil. Add mushrooms and cook for about 5 min. Then add wine and turn up the heat so that the wine comes to a boil and cook another 5 min or so. Add tomatoes, water, and sugar. Bring to a slow boil and cook another couple min. then add some parmesan cheese and red and green peppers. Sprinkle in about 2-3 T. more oregano and taste. Bring to a boil then reduce heat and cover, cook on low all day. Season to taste.

When I was a little boy my Grandmother would make me pasta fagiole for breakfast and while I sat there eating she would make this sauce. At about 10 or 11 years old she finally taught me how to make it. Of course she did not have the minced garlic, that is just something I have added, and she also had homemade sausage from Pauly DiStefano, but it is as close as I can get to hers.
