olive oil
1 package chicken (approx 1-1.5 lbs)
2 peppers (any: green, red, or yellow)
1/4 onion (if desired)
1 Sweet Baby Rays Barbeque Sauce
White Rice

Directions:
Directions:
1. Cut chicken into cubes.
2. Cut both peppers (remove all seeds) and 1/4 onion (if desired) into strips.
3. Heat olive oil in large pan. Add chicken, cook completely (no pink).
4. Add entire container of Sweet Baby Rays Barbeque Sauce, reduce heat. Cover.
5. Add peppers and onion to sauce and chicken.
6. Simmer covered on low-medium heat until peppers and onion are soft.
7. Serve over white rice.
