12 lean bacon slices
12 dates, prunes, scallops, or water chestnuts

Directions:

Stretch bacon lengthwise on a cutting board. (bacon slice can be cut in half)

Place a date, scallop, or water chestnut at one end of each slice and roll up. Secure with a toothpick to keep it closed.

Preheat a ridged griddle pan or broiler until hot. Place the bacon rolls in the pan or on the broiler rack and cook, turning once, for 5-10 minutes or until the bacon is crisp and browned. Whatever is inside the bacon should be thoroughly cooked.

Cooking alternative: bacon rolls can be placed on a baking sheet for 25-30 minutes in a preheated 400 º oven.

Variation: strips of prosciutto, brushed with a herb-flavored oil could be used in place of the bacon.
