1 1/2 c. flour
1 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
2 eggs
1 tsp. vanilla
1 c. grated carrots
2/3 c. oil
1/2 c. crushed pineapple, not drained
Nuts and raisins, if desired.

CREAM CHEESE FROSTING:
3 oz. cream cheese
1/4 c. soft butter
Vanilla
Approx. 2 c. confectionery sugar

Directions:
Combine dry ingredients and set aside.

Beat eggs and oil. Add carrots, pineapple and vanilla. Add dry ingredients. Beat for 2 minutes. If nuts and raisins are desired, add these in.

Add entire mixture to greased 9" square pan. Cook for 35 minutes in a 350º oven.

While cooking, beat together frosting ingredients until smooth and creamy. Once cake is cool, frost and enjoy!
