2 thinly sliced carrots
1/2 teaspoon salt
2 eggs
1/2 cup half and half
1 (16 oz.) can creamed corn
1/2 cup chopped onions
1 chopped green pepper
1/4 cup salted cracker crumbs
Butter

Directions:
Directions:
Preheat oven to 375°. In minimal amount of salted water, cook the carrots. Beat eggs, add cream, chopped onions, creamed corn and green pepper. Add cooked carrots. Place in 1 1/2 quart greased casserole dish. Sprinkle with cracker crumbs and dot with butter. Bake covered for 15 minutes. Uncover and bake until golden brown or knife inserted in center comes out clean.
