5 pounds fresh Biloxi shrimp
3/4 cup flour
2 teaspoons baking powder
1 cup cold water
2 tablespoons Wesson oil
1 egg
Salt to taste

Directions:
Directions:
Pat shrimp dry, mix all of the above together and make it as thick or thin adding the cold water accordingly. It is best if the batter is thicker. Dip shrimp in batter and fry in hot oil until golden brown.

When Azzie fried shrimp her platter would run over and there was never a crumb left. She would take me with her when she went to visit friends who worked for other people. Her best friend was Aunt Becky who worked for the Allen family and lived with them like Azzie lived with our family. Some of my fondest memories were swimming with the Allen's daughter, Ricky, and we would dive for silver dollars. Doctor Allen would flip them in the pool and Ricky and I would swim like fish.
