FOR A SINGLE CRUST:
1-1/2 cup sifted flour
1/2 cup shortening
1/2 tsp salt
3 to 5 Tbsp. ice water

Directions:
Directions:
Sift together flour and salt. Work ice-cold shortening into the mixture until it resembles a fine crumble. Add ice water 1 Tbsp. at a time and gently mix until dough holds together but is not sticky.

Wrap dough and place in the refrigerator to chill for at least 30 minutes. Flour a pastry cloth and roll dough to desired size. Carefully place into pie pan. Bake at 450º for 8 - 10 minutes. Cool and fill.

Double recipe for a two crust pie.
