Chicken Stock
1 whole 3-4 lb chicken
2 carrots
3 celery stalks
1 large white onion
1 head garlic
1/4 bunch fresh thyme
2 bay leaves
1 teaspoon black peppercorns


Soup
2 t olive oil
1 med onion
3 cloves garlic
2 carrots
2 celery ribs
4 fresh thyme sprigs
1 bay leaf
3 quarts fresh chicken stock (see above)
8 oz bag thin egg noodles
kosher salt and pepper

Directions:
Directions:
Stock: place chicken and vegetables in large stock pan over medium heat. pour enough water to cover meat and vegtables. add all stock contents and let cook for 1-2 hours, until chicken is done. when cool, pull meat off chicken, strain broth.

Soup: medium heat add onion, garlic, carrots and celery, thyme and bay leaf, cook until soft but not brown. pour chicken stock and bring to boil. add noodles, and simmer for 10 minutes, add more salt and pepper for taste.
