4 c skinned and chopped tomatoes
1 sm garlic head - minced
1 green pepper - seeded and minced
1 medium yellow onion - minced
1 sm - med jalapeño - seeded and minced
1 1/2 tbs apple cider vinegar
3 drops Tabasco sauce (more if you like it hotter)

Mix all ingredients in 6qt cooking pan. Reduce down abt half. Can be processed into 2 pint canning jars for abt 20-25 mins.

I had some yellow toms on hand and that made the salsa kind of orangish. I also sautéed the green pepper, onion and the garlic for abt 4-5 mins to soften them up some. Besides I really like the smell of that combo. I then added them to the rest of the ingredients before reducing it. We never even got to the processing part - ate too much of it. I cooked it for 1 1/2 hrs but really 1 1/4 hr would have been better - not so saucy.
