4 (1 in. thick) slices of French bread baguette
1/2 c. chopped plum tomato
1 T. chopped fresh basil
1 T. chopped pitted green olives
1/2 tsp. balsamic vinegar
1/2 tsp. olive oil
1/2 tsp. sea salt
freshly ground pepper
1 garlic clove
olive oil to drizzle or cooking spray
(1 T. finely minced onion) is optional

Directions:
Directions:
Preheat oven to 375º .

Combine tomato, basil, olives, vinegar .olive oil,
sea salt, pepper and garlic. (Add 1 T. minced onion is optional.)

Lightly coat/drizzle both sides of bread slices with olive oil or cooking spray and arrange on baking sheet. Bake at 375º for 4 minutes on each side to lightly toast.

Rub 1 side of bread with halved garlic. Top evenly with tomato mixture.

Note: Variation with Cheese Topping
After rubbing toasted bread with garlic; top each slice with a thin slice of mozzarella cheese and toast for a second time. Top with tomato mixture.
