Corn Tortillas:
1 cup all-purpose flour
2 cups cornmeal
1 teaspoon salt
Water

Sauce:
2 cans Las Palmas chili sauce
4 cans water
1 tablespoon flour for thickening

Topping:
1 pound grated cheese
1 large onion

Tortillas:
Make a thin batter with flour, cornmeal salt and water. Fry the tortilla batter like pancakes.

Sauce:
Mix all sauce ingredients together and boil until thick. Dip two or three tortillas in sauce and stack on plate. Top with cheese and onion with 1 tablespoon of the sauce. Bake at 350º until bubbly.

A fried egg on top is very good and looks pretty.

Katherine Huffman shared this recipe with Julia Riggs. Katherine's enchiladas are little different because you stack them instead of rolling them and they're very good.
